The Winter school seminars is an initiative from DHI, Center for Environment and Toxicology, Øresund Food Network, Danish Obesity Research Centre and Peter Olesen, Actifoods. The idea was formulated by the initiative group following two seminars arranged by The Danish Council for Strategic Research and DHI about the relation between food, food supplements and health and is meant to present state-of-the-art research from different areas within food and health. The aim of the seminars is to support sharing of knowledge within different but related fields of research. The first Winter school was also a Ph.D.-course. The first Winter school concerned “The role of the gastrointestinal tract for development of allergy and obesity” and the theme of the second Winter school is “Bioactive compounds in food.
